Hawaiian style beef stew made with beef shanks instead of stew meat and served on a bed of fresh Sumida Farm watercress.

In a large pot, heat oil over medium-high heat and fry beef shanks until lightly browned, turning over, about 5 min. Add onion and fry about 3 min. Add garlic and fry about ½ min. Add remaining ingredients and simmer 1 ½-2 hours until beef is tender and falling off the bone.

- 2-3 large beef shanks
- 1 medium local sweet onion, cut in wedges
- 1 tablespoon oil
- 2 cloves garlic, minced
- 2 (14-½ oz.) cans beef broth
- 2 tablespoons worcestershire sauce
- ½ cup wine
- 2 bay leaves
- 1 teaspoon dried thyme
- 2 carrots, peeled and cut into chunks
- 2 stalks celery, cut into chunks
- 2 potatoes, peeled and cut into chunks
- Salt and pepper to taste
